This is a favorite of our family, so we keep peppers and cheese on hand. We like to use Poblano’s, they just have so much flavor and *usually are not too spicy. This make a fun side dish or late night snack;)
Ingredients:
- Poblanos
- Cheese – use what you have, whole milk mozzarella our favorite
- olive oil spray
- Seasoning – Greek, Tony’s or our new fun is Punch Ya Daddy Cajun Mesquite
Pre-heat the oven to 400F. Cut the tops off the peppers and get the seeds out. Stuff sliced cheese into peppers. Lightly spray with olive oil and sprinkle with seasoning. Into the oven, check after 10 min. I like mine pretty well done, so I leave them for closer to 20min. They are also Delish on the Grill! Enjoy
